Kirli Hanım Cheese (Olgun Kirli Hanım cheese)
This very special cheese is made with curd obtained from the whey left over from making basket cheese from 100% sheep's milk. When the curd strained in perforated containers has lost enough moisture, it is taken out of the mold and matured on wooden shelves. The cheese, which is cooked slowly in the oven, carries the flavors to the palate with its ripened and smoked taste. Kirli Hanım cheese, one of the rare cheeses of Anatolia, is a product of Slow Food Ark of Taste.
